If you want to centre text then simply use the bbcode [center] in the cell. This works in any cell, exept the cells in the last column (due some code in vBulletin...). Formating with css would be better but currently it is not possible to format a defined column, sorry.

Images (through vB code) should work outside of a table as well as inside.
It could be that you have to enable Admincp -> vBulletin Options -> Message Posting and Editing Options -> Allow Dynamic URL for [IMG] Tags for this image, but I don't recommend this.
