I've made a new tab for the product reviews and would like to know if it's possible to keep the "Reviews" tab selected when viewing the product thread. Any help would be greatly appreciated.

To disable the tab you disable the plugin...

To disable the tab you disable the plugin "process_templates_complete" under the plugin manager. You can then recreate the tab or just a menu with the navigation manager.
