Upcoming Events - how to display DAYS?

The upcoming events box is great for letting members know of upcoming events, however it only displays the dates numerically (e.g., 2/10/05). I think it would be more user friendly if it could also display the date (e.g., Thursday 2/10/05) to bring the dates more into perspective.

Is there an easy way to achieve this?
