I'm having a problem modifying the title of unregistered users. Instead of "Guest" appearing, I would like to change it to something else. (In my case "Tourist")

I have modified the 'Unregistered/Not logged in' in user/group permissions to reflect the title I would like to display. Update user titles, but I still see "Guest".

Any help would be much appreciated.

showthread.php, do a search for "Guest" and you should find the variable you're looking for.
