Custom profile fields into an email

Have tried various combinations to insert a custom profile field into the body of an email. Can't. $username or $userid obviously work, but not userfield. Have tried:
$userfield(field23)
$userfield23
$userfield(23)
and about a dozen ther variations.
Help.
