How can I alter the settings so that guests can see more than 4 or 5 threads per forum when browsing.

Just their usergroup permissions, guests see what they can see. There is nothing special that allows them to see more or less than what members see aside from permissions.

There has to be a setting where you control how many threads a guest can see per forum, some are showing all the threads available, others are just showing the latest 5 threads

That's just the default view age.

How do I change it on a per forum basis ?

My other VB forum shows all threads to guests in all forums

Its not a guest thing, its an all users thing. Edit each forum and set it.
