Is there any cracks to change the amount of posts or the amount of members?

If you want to edit the totals on forumhome you have to edit the templates.
Or if you want to do it per-forum, these are stored in the database so you can change them with phpmyadmin/telnet.

Not really... were just setting it back to what it was. We have had numerous problems. We've had a ADMIN with a personal vandetta and deleted all our members. We've been hacked and had all our members deleted. Plus we've had our server just quit on us all together to where we could no longer even log in to move the files to a new server.... that was with the UBB though. But we need to set everything back to what it was.

well, i dont want to be rude, or sound like a ass, but they have to sign back up correct? what will happen when a member looks at all of the member area sometime, and than finds out that there are quite a few less, or more, than what the numbers show?
That is my point. I feel for you on the server issues, because i have been there just recently myself, so please do not think that i am trying to throw salt on some open wounds here, its just that there will be even more problems when you try to modify a number that most people trust to be true.
