How can I add/remove profile details on a users info that displays next to their posts?

Currently it shows:

Join Date
Location
Posts
Rep Power

I'd also like it to show some of the custom profile fields...

Some of those are set in AdminCP > Settings > Options > Thread Display Options (showthread) > Post Elements. Any others, you will need to modify the template to remove. See this thread for showing custom profile fields in your postbit - Using your User Profile Fields in your postbit templates (w/ all plugin method)
