Forum display listings
 
I found how to set the forum display listings to make all my categories just show up on the home page and then their sub forums do not show till you click the category(BUT)

Which option do I need to set to make some forums display all the categories and their sub forums. BUT have some forums display only the categories not show their sub forums till you click the category area?

So you want the sub-forums to be displayed on the main forum index if I understand you right. Go to Forum Manager and cedit the categories and choose "Yes" for "Show this Forum and Child Forums on the Quick Navigation menu". It's on the bottom.
