What does "revert" templates do?
 
After upgrading to 4.0.5 from 3.8.x I get the following notification:

There are currently 7 customized template(s) that need to be updated or reverted. Some sections of vBulletin may not function if you do not do this!

There is no explanation of what "reverting" them will do. Does it change them back to my 3.8.x modified templates, or does it change them back to the new un-modified 4.0.5 templates?

It will revert them to the default (whatever they are in the master template set) of the current version. 4.0.5 in your case.
