How do I enabled RSS for the forums; where there is an icon to click for subscription

AdminCP > Settings > Options > External Data Provider

Enable XML Syndication
Thread Cutoff
Thread Cache Lifespan
Maximum External Records

External JS - Yes
RSS Synd. - Yes
Podcasting - Yes

Thread cutoff - Whatever you want
Thread Cache Lifespan - Whatever you want
Maximum Ext Records. - Whatever you want.

Is it possible to add RSS for specific forums rather than all of them?

Yes....when you add a new RSS feed yeah.
