One category to show sub-forums & one category to hide sub-forums.

I was told that there was a way do do this with a previous version but not 3.8.1
Unfortunately I am not a coder and dont know where to start to do this. Can someone take a look at this and let me know if a quick hack can me make to make this feature available. I have seen many posts with people asking similar questions.

you just have to exclude what forums you want to show the subforums. If i am wrong please let me know.
