Thats basically it, be sure to back everything up just incase

Is there just a way of uploading the CORE files?
ie keep the current images/settings/template edits in place, but just upload certain files needed for the upgrade? |

Super. So its just the 3.7 mods that may or may not work for 3.8 is the issue
|
You will also need to perform the necessary mandatory template edits.
|
Is it possible to do a COMPLETE backup?
ie templates, database, php files etc etc |
Download a DB backup, and backup the files. That's a complete backup.
