Is it normal that when we try to optimize the tables it delays very much the process? what happens if we interrupts the process?

Try just optimizing one table at a time. See if that helps.

If I recall, when you do a repair/optimize, you need space available on the server for writing/reading for the process. If there isn't at least as much space as the table/database, then you may run into some problems.

I would not interrupt the process - that is probably a bad idea.
