How can I make...
 
All users post in 1 colour, is there a mod for this etc?

E.g. All posts are made in red instead of the same colour?

You will need to modify the CSS used, these can be found through the Style Manager.

In the Style Manager, next to your style in the drop-down, select Edit CSS.

That is also the problem, I am uncertain if it is just normal coding (text) or something different

It is CSS, Cascading Style Sheets.

Do you mean the content inside of the post, (i.e. the stuff I'm writing now)?

If so, first make sure you disable the COLOR BBCode. (AdminCP > vBulletin Options > vBulletin Options > BBCode Settings > Uncheck 'Allow Color BBCode')

Then go into the CSS Editor (AdminCP > Styles & Templates > Style Manager > (From drop Down menu on the right pane) Main CSS). Look for the box which has the heading "First Alternating Color", in the box located next to the words Font Color type in the Hex colour code that you want.
