Ive noticed on some boards it says

All other content copyright their respective owners; no infringement intended.

Is there anyway I can add that to my board?

Probably the easiest way to accomplish this is to go to your:

AdminCP > vBulletin Options > Site Name / URL / Contact Details > and add your copyright text in the "Copyright Text" textarea.

Is there any way that I can make a second line instead of it all going onto the same line?

Use a <br /> tag.

E.g.

Actually I tested in the input box Redlinemotorsports mentioned and it worked :p (3.6.7 PL1)
