MySQL UTF-8

Hello!
I'm builting a site which its main language is Hebrew, therefore the default charset is windows-1255.
However i want the encoding of the site to be UTF-8, so i know i have to make the collation of the DB tables utf-8 and also the encoding of the entire table as UTF-8.
The tables in the DB do not yet exist, so i want to know how to do it?
