admin -> styles and templates -> style manager -> select "StyleVars" from your style's menu -> Code Block Width (pixels)

Quote doesn't have fixed width. If you want to set fixed width for quote then edit template bbcode_quote, and replace this:

<div style="margin:20px; margin-top:5px; <if condition="$show['iewidthfix']">width: 100%;</if>">

with this:

<div style="margin-left:20px; margin-top:5px; width: $stylevar[codeblockwidth];">
