How do I widen the LAST POST section
 

Im trying to widen the LAST posts section of the defualt template?? The default is way to small. Is there an easy way to do this? If so please list steps and whatever else is needed.

If you're asking how to show more of the title of the last post:
Admin CP > vBulletin Options > Forum Listings Display Options > Last Thread Title Maximum Displayed Characters

The actual width of the column itself is dependent on how large the largest title/last post is. So, all but one forum has no posts in it, and that one forum has a thread with only three characters, the column width will adjust downwards, and if it has 30 (and you've set the Max Char to 30), it will be wider.
