Categories on their own templates

Some of the categories on their own templates - Is this possible and how should it be done?

We have different categories and we would like to have one universal forum interface with it's own template and all the categories visible AND also a different template to show couple of the categories on their own wihtout other "unrelated" categories visible.

I attach a JPEG which hopefully explains the idea better than my words =)
