Keep a blank option on top. Like DEFAULT - no selection. Then the top one will be a blank. People can select the blank option and it reverts to default.

I did exactly the same thing for the font size which worked but the problem is everyone's size font changed with it. The style and color worked great.

its very good i try it
but there is small side effect in it this when some one adding an URL
its applying style on it and make the URL big
specially when URL is very long and the font style chosen was big

If you want font size you just make another profile field with the same options the OP posted.
after this
<font COLOR="$post[fieldX]"><font face="$post[fieldX]">

add this

<font size="$post[fieldX]"> be sure you write the correct field number in!!
