When a message get's posted in the mods forum about an attack, it keeps saying a guest user and not their id for some reason. I don't allow guests to posts, what could I have done wrong?

I would think so. Even if you disable url tags they can spam the board and post the link - disabling url tags for them just means they won't parse the link - but it will still be there.

How do you remove someone from the Coventry list? I wanna make sure I know how to remove it before I enable it.

Yes. You can enter words and domains on the local blacklist and use it in addition to the main blacklist -- you can also leave the blacklist pointer empty in which case only the local blacklist will be used.
