Would it be possible to set this mod up with the addition to "include" the forum's you want to moderate users posts and threads?

Right now it is setup to "Excluded Forums". If I have just 1 forum I'm concerned with moderating per this mod, I have to list ALL 100+ forums ID's my board has.

Yes, it is possible. You are free to edit the mod to suit your needs.
