How do I change something like:

» Site Here.com » User Control Panel

located at the top left, kind of.

Where would I go to edit something like that?

It's in the navbar.
For example the first one is your site, the second would be the category name, the third would be the folder

For example:
» MySite.com » Main Category » Main Forum

So you're looking to strip out all of the fields but the current one? Right now my breadcrumbs look like:

I just want to change the name some how.

Like if it was to be called "Arcade" it would show up like this:
MySite.com » Arcade

I want it like this:

MySite.com » Play Ground

As an example.
