Subject. I need to change that, but have no idea where to do that.

IIRC, that's in the admincp under style settings.

StyleVars for each styles!

can't find it, maybe i'm blind :( it's not in "All Style Options", not in "StyleVars" either.

ACP --> Languages & Phrases --> Language Manager --> Edit Settings --> HTML Character Set

I've had to set mine to "ISO-8859-1" already (my fresh install of 3.0.3 was blank for some reason).
