Just how many forums would you suggest to start out with?

I'm interested in knowing since I'll be opening up a new forum and I don't want to have too many.

You don't want so many as to make your site look abandoned. The idea is to have many posts in each forum, thus making your forum appear more active, and eventually be more active.

More subcategorizing would be useful too :)
Group the freebies together and give it some category heading like Freebie Zone or something.
Likewise for similiar forums.
