Profile field specific for a project

We plan to offer coaching services and need to ask the athletes a million questions about their health etc. When they have filled out everything, they should not be able to change it as the info is the base of the coaching plan (has to do with liability also).
We do not want to bother those not signing up for this with all those questions.

Can I use the Profile field (make a second profile field?) or do you have any suggestions...

Any help appreciated.

We make them requiered, hidden and not editable.... but can they also not show at all for other members than those in that specific usergroup?
