I'm wondering: if I buy vBulletin and someone's hacking into the admin stuff somehow, how do I find out how he's doing it? Is there a way?

Yes. There are admin logs available, hacks to protect your admin, and you can protect the admin file and directory with .htaccess - prevention is better than cure.
