Edit the postbit_online template and postbit_offline template and change the font color there. :)

in the postbit_offline: do I remove all this below
and add <Offline!>
********************
<img src="{imagesfolder}/off.gif" border="0" alt="$post[username] is offline" align="absmiddle">

********************
and the same for <Online!>
*************************

<img src="{imagesfolder}/on.gif" border="0" alt="$post[username] is online now" align="absmiddle">

Just move $onlinestatus from where it is now to under $post[avatar].

In postbit_offline shouldn't you have

< img src="YOURSITEHERE/off.gif" border="0" alt="$post[username] is offline" align="absmiddle" >

and in postbit_online

< img src="YOURSITEHERE/on.gif" border="0" alt="$post[username] is online now" align="absmiddle" >

In postbit_offline :

Replace the entire contents with :

<font color="#FFFFFF">Offline</font>
(This will give you white text)

In postbit_online :

Replace the Entire Contents with :

<table style="filter:glow(color=yellow, strength=2)"><font face="verdana" size="1" color="#FFFFFF">Online</font></table>
(This will give you glowing yellow text)

Now just place :

$onlinestatus

wherever you want in the postbit template...
