I want to display number of posts and threads and members

I can display this on my version 3.8:

Threads: 48,307, Posts: 699,271, Members: 440,601
Welcome to our newest member, k24b83ap

My version 5 doesn't display the stats.
What am i missing or where is it to turn it on?

Their is not one available yet. There is a issue in JIRA about it, http://tracker.vbulletin.com/browse/VBV-4678

Looks like it may make it into 5.1.5
Don't have a date. The statistics module should be available in 5.1.5. The bug you mentioned above isn't related to the Statistics module. It is part of the "What's Going On" module which was formally called "Users Online". That specific issue should be fixed in 5.1.4 which is currently in beta test and will hopefully be released soon.

any way to make the toggle advanced editer auto show up without having to click the A?

No, there is currently no way to toggle it on by default. Other than:

The first time you click it, while logged in, it should save that state every time you click back into the editor. The bar should reappear once you click in the editor to start typing.
