Can different icons be added to the left of the forum category name?

You can use CSS to change them, if that is what you are asking. There is no default option in the software to set an icon for each form/category/channel though.

Thanks Lynne for the link. Ill give that a try...are those codes from 4.2..will they work in 5.1?

The link is to a thread in the vB5 Tutorial area, so they should only work for vB5 sites.
