I have the 4.0 cms suite currently and was thinking of just going with a straight forum, is it easily done to change to a forum only for now then if decide need the cms again later go back?

Yes it is very easy. Go into the admin cp. then go down to plugins and and products>manage products> and disable vbulletin CMS.
