How can I list AND view user deleted posts?

Not sure what you mean. As an admin, the default is to see that there is a deleted post in the thread and you just have to click View Post to see it.

Thanks for the info. Is there a way to list then view the deleted posts from a user rather than view them one-by-one from within the thread?

They are listed when you "Find all Post by User". They will have a small deleted icon on them.

As an admin, you can view all Deleted Items from your User CP, but you can't view only Deleted Items from a single user there.
