Location of $block_data[fields]?

I'm trying to find where to edit the contents of $block_data[fields], so I can move certain custom fields from the "About Me" tab in Profiles to "Contact Info".

Could someone please point me in the right direction? I can't seem to find anything in the templates, nor in vB's documentation or on Google...

That's not going to be easy as I'm sure you'd like it. It's all done in /includes/class_profileblock.php I believe.

You might want to instead write a plugin that basically nulls out the profile fields prior to the About Me tab being spit out and then another plugin to add them to another tab. I haven't tried this, but that is the approach I would take.
