If i am using the most updated VB is it possible to use a skin for a older version of VB?

Yes. In order to work correctly with the latest version of vbulletin, you will have to update the templates to the latest version

Oh right is that an easy process? I have never done that before! Do you think i should just get another template which works with my version of VB?

That depends on how old the template/style is
