How do I block unregistered guests from looking at my member list, and members albums??

I think you can create a plugin using the memberlist_start hook location:

if (!isset($vbulletin->userinfo['userid']) OR $vbulletin->userinfo['userid'] == 0)
{
print_no_permission();
}
That should not allow unregistered users to view it (I think).

Isn't this inbuilt to vBulletin?

ACP > Usergroups > Usergroup Manager > Unregistered/not logged in > General Permissions > Can View Member Info > NO

And there are a few mods around that will stop guests from doing lots of things. But really, all the guests you see on your forum are likely just search bots. I mean, what good would it do for a competitor to search your member list? Not like they can gather email addresses or anything.

That's different:
Can View Member Info
This option refers to user profiles on your forums. If this option is disabled then members of this group will not be able to view user profiles on your forums.

Yes, that will block access to the Members list
