Whats the difference? Fixed and Fluid Templates

I've seen fixed templates which are more centered and smaller, and the fluids which is wider. Whats the difference and what do you prefer?

Fixed simply means that the main content width stays the same no matter what the size of the browser window is. Fluid means the main content width will expand or contract depending on the size of the browser window.
