How do i do subscriptions and hide total members

Im trying to figure out how to setup a paid subscription,where during high traffic times i could allow only the paid or vip members to access my forum,but at other times let all members have access.how would i go about setting this up.

Also i would like to hide total members on the bottom of forum page,is there a way to set this to private?
