Curious if there is a way to just back up the posts, members, threads, etc. not including the style/theme. So simply put, have a forum with its posts and style and all that but I just want to save the posts and members and then apply those to new forum with the default theme. So I want to take my old forum and just transfer the posts, members, etc. to a new forum excluding the theme in its entirety.

You'll have to download the impex tool from your vBulletin.com members area and follow the instructions for impex that are with the documentation.
It maybe quicker however to just restore the database from a complete backup, and install a default skin and remove plugins.

If all you want to do is get rid of the style, then just create a new one with no parent and it will be a totally default vbulletin style and then delete the other one. Much easier than doing the whole impex thing if your only goal is to have a new default style instead of the old one.

If you are still going forward with ImpEx (which it doesn't look like it is necessary), then documentation can be found in the manual (http://www.vbulletin.com/docs/html/impex).
