Will using gmail as a mail server reduce my cpu usage?

Yes, if you are currently handling mail through your own server.
It's not a great solution due to gmail's 500 email per day send quota. Their SMTP server refuses to send anything over the quota. If you have a small forum you can probably get by with it for awhile.

Is that 500 emails total per day, or per user per day??

Gmail or any other, off-loading resources to an external server will always result in a lower CPU usage for the original server.
