1. How hard or how many hoops am I going to have to jump through (multiple upgrade scripts) to go from 3.0.x to 3.6.8?
2. Is it going to be possible to keep my design without having to redo it for 3.6.8?
3. Any major differences I should be made aware of before upgrading to 3.6.8 that weren't in 3.0.x that I may or may not have a "beef" with?
Thank you.

I just did this few days ago. I went from 3.0.2 => 3.6.8 without any issues. However, I clicked "Next Step x of x" maybe 300 times to get 3.0.2 to 3.6.8 :)
Good Luck!

I did this a couple of weeks ago and there were not any problems at all, a nice clean upgrade :)

1./ The upgrade should be pretty straightforward.
2./ You will have to not redo, but you will have to make a whole bunch of mandatory changes as specified in the release threads.
3./ The plugins system.

What exactly do you mean or can you give me an example of what you mean by "mandatory changes"?
Thanks.

and other things.
Like rebuilding forum counters and thread counters.

Mandatory changes to templates are things that have to be done in order for vBulletin functionality to properly work, there are many tweaks done to templates between versions, but few are required.
