How does everyone handle denial of service attacks from hackers? Simple banning of IPs or something else?

i dont think this will ever be stopped, people just have nothing better todo with there time.
make sure you remember your password for your server log in rather than clicking remember me.

So, do you just sit back and let it happen?
Anyone else have any ideas/opinions/options on this?

You can use a combination of things depending on your access to the server. I run a modified version of sshblack that monitors my web logs and looks for specific behavior/patterns and automatically adds the IP address into my iptables firewall based on what's going on.
