Can I change how long member's are shown online for?

The default is set at 15 minutes am I able to shorten or lengthen this?

Yes it is under AdminCP -> vBulletin Options -> vBulletin Options -> Cookie and Header HTTP Options ->

Session Timeout - This is the option in seconds...Default is 900 which 15 minutes as you said.
