I like having a choice... usually around 760px or 80-90% width. Both centered.

Fixed, so you can manage the look of your site more accurate, so it looks the same on every screen :)
But ofcourse you can let your users choose.

Fluid - nothing is more annoying than a forum that only fills half your screen.

I like it fixed because it looks more professional in my opinion. I really dont like having wide forums...>_< Although, I do let my users pick as well.

Readability = Usability

"We" are accustom to reading in a defined width/height ... eg. books, letters, etc.

People don't like reading more than x amount of words per line ... newspapers are broken up into columns for a reason
Everyone sees the same thing that you see. eg. equal amount of text; equal amount of white space, etcTIP

You should always design with the lowest common denominator in mind.
A fixed layout is not always best. For example, a site primarily to showcase photos would be best in a variable (liquid) width layout.
If using a variable layout ... make sure the text area is a fixed width this will help ensure that your readers will stick around to read the entire text.

Fluid is my choice. And if people are so set in reading in fixed width/height as stated above, a simple drag of the browser window fixes that.

BTW, fixed width looks like crap on a big screen and there ain't a damn thing that you can do to change that. Fluid allows many choices. :P

Just to add to what Princeton had to say...

Don't have your content at 100% width. Fluid is good, but have other elements in your page to cut down on the size. The wider the content, the more eye strain, but that doesn't mean your content should be tiny. Have it at a comfortable width that is easy to read, yet involves little eye movement.

Fixed for me. I like having precise control over the entire look of the site, right down to the last pixel.
