How much work is involved in terms of managing a server? i.e
-os upgrades
-security
-performance management
Do you guys do it your self, use a managed server host, or pay a server management company (if so any recommendations)

Platinmum Server Management is the way to go.
Its way cheaper to find a unmanaged host such as Softlayer.com then simply give PSM the keys to the server. They'll optimize, harden, update and every other good thing for you all for $30/monthly. The cheapest you'll find anywhere for such awesome service

Thats a lot cheaper than other places ive seen, ever had any bad experiences with them?
And even for server management companies that charge $75 a month, its still cheaper than paying for a managed host, so I think its the route I'm going to take
