Getting email for EVERY new post?

I nknow I can set it up to send me an email for every new post on a forum-by-forum basis. But can I enable this globally? My forum is new, and I want to make sure I can jump on new posts asap.

Just go to UserCP - Edit Options and you will see this:

Default Thread Subscription Mode
When you post a new thread, or reply to a topic, you can choose to automatically add that thread to your list of subscribed threads, with the option to receive email notification of new replies to that thread.

There's a dropdown there wich you can choose Instant notification by email ;)

Yes, but this will only apply to the threads I have been involved in my self. This there no way to make this setting for all forums and all posts?

No, there is no (simple) way to do that. The best you could get is to add your e-mail to be notified by every forum, I believe that's an option in the forum settings in the ACP.
