How Do I Make Posts From A Longer Period Displayed by Default?

On some of my forums it says:
There have been no posts in the last 30 days in this forum.

How can I make it check for posts from last 3 months or disable this feature overall?

Edit the forum in the Manage Forum interface, and set "Show Threads From" to what you want.
Im fairly certain 3 months is an option, as is All Threads.
