This probably sounds really stupid, but people on here wouldn't happen to know how to make the Sub Forums appear on the forum home page would they?

I'm not sure I understand exactly what you mean, but you can try to check here:
admincp > vbulletin options > Forum Listings Display Options

did you try changing the settings in the admincp that I posted? I'm pretty sure its in there.

go to the admincp, then click on vbulletin options then scroll down to forum listings display options.
don't copy the values from the picture that's not what shows them. actually I could be completely wrong and in order to get the look you want you have to edit something else or use a hack.
